Roast Lamb with 50 Garlic Cloves

1.5kg leg of lamb
1 tbs coconut oil
50 unpeeled garlic cloves
1½ cups chicken stock
Pinch of ground sea salt (optional)


Preheat oven to 150° Celsius / 300° Fahrenheit.

Trim the fat from the leg of lamb.

Place the lamb in a large pot on medium-high heat and brown the leg of lamb in the coconut oil. Transfer the lamb into a heavy lidded casserole dish which will hold it comfortably.

Add the garlic cloves, stock and salt then place the lid on the casserole dish and firmly seal the lid with aluminium foil to prevent any moisture escaping.

Put the casserole dish into the oven and cook for 6-10 hours until the meat is very tender and falls off the bone when carving.

Serve with some lightly steamed vegetables.
