Chilies are renowned for bringing life to food all over the world. But do you know your Jalapeno from your Banana chili?

Chilies are mainly used in Asian, Mediterranean, Middle Eastern and Mexican cuisines, and while they vary in heat, they also vary in flavor.

The Serrano Chili  Cylindrical in shape, and red or green in color, the Serrano chili is moderately hot but very sharp on the palette. Found in Mexico and Thailand, the Serrano is regularly used for soups, curries, and stir-fries. It is regularly coupled with garlic to make sauces and garnishes.

The Jalapeno Chili Pepper  Perhaps the most commonly known chili in the Western world, this spicy number is oval shaped with a think green flesh. The Jalapeno can be stuffed, pickled and grilled.

The Banana Chili  The Banana Chili is mild and slightly sweet, yet fleshy and large. It is commonly used in salads as a garnish, or to accompany kebabs on a barbeque. Its color varies from a lime green to a reddy orange.

The Thai Chili (Bird’s Eye)  Thailand is famous for its Thai red and green curries which commonly include the Bird’s Eye Chili. The green Bird’s Eye Chili is hotter than the red, and both are used in dipping sauces and within many Thai dishes.

The Whole Dried Chili Pepper  The whole dried chili pepper is the flag of the chili world. When we think chili, we think red and hot. Integral in Indian and Mexican cuisine, this notorious chili is often crushed to make curry pastes.

Remember: handle hot chilies carefully using preparation gloves. Make sure you wash you hands after chopping, and don’t touch your eyes or skin during preparation.
